
From Guadalajara to Grand Junction — by way of Alabama
Carmen Alejandre Gallegos was born in Guadalajara, Jalisco, Mexico and raised in Grand Junction, Colorado. After years of working in the medical field and running her own business, a new calling led her to Huntsville, Alabama — where she spent nearly four years attending a prophetic equipping ministry.
It was there, in the heart of the South, that Carmen discovered a deep love for Creole and Cajun cuisine, Southern hospitality, and the warmth of a culture built around food and community. She began crafting her own versions of the dishes she fell in love with, weaving in the Mexican flavors of her heritage — signature sauces, unexpected infusions, and a personal touch that makes every plate unmistakably hers.
Carmen’s Cajun Seafood & Catering is the result: a Southern kitchen with a Mexican soul, brought home to the Grand Valley.
